These following recipes are simple yet very tempting, mostly effortless to prepare for your friends and family coming over your place. Here are easy recipes shared by Executive Chef, Mr. Keshab Ram Shrestha of Shanker Hotel. 

Corn Fritters

A nutritious and warming lunch that guarantees to make your friends and family go crazy. This vegetarian recipe might seem a lot but worth a celebration. Try this simple starter recipe using the following ingredients:

Sweet Corn 250gm, Crushed garlic 1, Fresh Coriander 1 Bunch, Spring Onion 1 Bunch, Rice Flower 75 Gm, Egg Beaten 2, Water 60ml, Salt & Pepper (as per taste), Soya sauce 15ml, Oil for Frying, Sweet chili sauce (for serving).

There is no ground rule making this recipe. Simply mix all the ingredients mentioned above in a large bowl. Until then heat your oil over medium heat. Once your fritter batter is mixed homogeneously, drop into the oil sliding your batter away from you so it doesn’t splash. Shape them into bite size pieces frying until golden brown. Serve them with sweet chili sauce to cut down the heat. Let them enjoy.

 

Coriander & Lemon Chicken

This next recipe is exquisite and easy to prepare. A very light and luscious lemon sauce really pops making this dish simply divine. It’s best served with roasted potatoes or just simple plain rice. Ingredients:

Chicken Thighs, Chopped Coriander (few bunch), Fresh lemon Juice (¼ cup), 1 clove garlic minced, Cumin Powder ½ tablespoon, Red pepper Flacks ½ tablespoon, Olive Oil over 2-3 tablespoon, Salt & Pepper as per taste

Preheat your oven to 200 degrees or medium heat according to your type of oven. Using a large bowl mix chopped coriander, lemon juice, minced garlic, cumin powder and red chili flakes and marinates the chicken for at least 1 hour or more. Heat up your skillet and sear the chicken on both sides for 2-3 minutes. Once you set a color on your chicken, roast them in the oven for 10-12 minutes. Serve them with plain rice drizzling over the lemon sauce back from the pan. Let them enjoy.
